Healthy Vegetable Barley Soup

A fiber-rich soup combining chewy barley, tender vegetables, leafy greens, and savory herbs for a nourishing and satisfying meal.

  • Total Time: 50 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 cup Barley (use pearl barley for faster cooking or hulled barley for more chew and fiber)
  • 4 cups Vegetable broth (choose low-sodium broth to control seasoning; mushroom broth adds depth)
  • 1 Onion, chopped (yellow onion offers balanced flavor; white onion tastes slightly sharper)
  • 2 Carrots, diced (cut into even pieces to soften uniformly)
  • 2 Celery stalks, diced (fennel can replace part of the celery for a subtle anise flavor)
  • 3 cloves Garlic, minced (fresh garlic provides the strongest flavor; use garlic powder if necessary)
  • 1 can Diced tomatoes (use fire-roasted tomatoes for smoky depth or crushed tomatoes for a smoother broth)
  • 1 teaspoon Dried thyme (Italian seasoning can replace thyme in equal quantity)
  • 1 teaspoon Dried basil (fresh basil works well when stirred in after cooking)
  • Salt and pepper, to taste (season gradually)
  • 2 cups Spinach or kale (spinach wilts quickly; chopped kale provides firmer texture)
  • A small amount of Oil (use olive oil, avocado oil, or vegetable oil for sautéing)

Instructions

  1. Heat a small amount of oil in a large pot over medium heat.
  2. Add the chopped onion, diced carrots, diced celery, and minced garlic.
  3. Sauté the vegetables for 5 to 7 minutes until the onion turns translucent and the vegetables soften slightly.
  4. Stir the barley into the softened vegetables.
  5. Pour in the vegetable broth and diced tomatoes.
  6. Add the dried thyme, dried basil, salt, and pepper.
  7. Scrape the bottom of the pot to loosen any browned aromatic pieces.
  8. Bring the soup to a full boil over medium-high heat.
  9. Reduce the heat to low once the broth begins boiling.
  10. Cover the pot partially and simmer for 30 to 40 minutes.
  11. Stir occasionally to prevent barley from settling on the bottom.
  12. Check the barley after 30 minutes for a tender but pleasantly chewy texture.
  13. Stir the spinach or chopped kale into the hot soup.
  14. Cook spinach for 1 to 2 minutes or kale for 3 to 5 minutes.
  15. Taste the soup and adjust the salt and pepper before serving.
  16. Combine the barley, broth, onion, carrots, celery, garlic, tomatoes, herbs, salt, and pepper in the slow cooker.
  17. Cook the soup on low for 6 to 8 hours or on high for 3 to 4 hours.
  18. Stir in the spinach or kale during the final 10 minutes.
  19. Serve the soup once the grains and vegetables reach the desired tenderness.

Notes

Rinse the barley under cool water before cooking to remove loose starch and improve broth clarity. Use low-sodium broth for better flavor control.
