Ingredients
Scale
- 1 lb Chicken breast, diced (use skinless for healthier options)
- 2 cans White beans, drained and rinsed (canned beans save time; you can also use cooked dry beans)
- 1 can Green chiles, diced (add more for extra heat)
- 1 Onion, chopped (yellow or white onions work best)
- 2 cloves Garlic, minced (freshly minced enhances flavor)
- 1 tsp Cumin (gives depth to the chili)
- 1 tsp Chili powder (adjust to your spice preference)
- 4 cups Chicken broth (low-sodium options are recommended for health)
- Salt and pepper to taste (season to enhance flavors)
- Optional toppings (Cilantro, avocado, lime wedges, as desired)
Instructions
- Heat a splash of oil in a large pot over medium heat.
- Add the chopped onion and garlic, cooking until softened.
- Stir in the diced chicken, cooking until browned.
- Mix in the drained white beans, diced green chiles, cumin, chili powder, and chicken broth.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
- After simmering, season with salt and pepper to taste.
- Serve hot, topped with cilantro, avocado, and lime if desired.
Notes
Use fresh ingredients for the best flavor. Let the chili sit for an hour post-cooking to allow flavors to meld. Customize the spice by adding jalapeños or hot sauce.
