Ingredients
Scale
- 1 cup Cooked chicken, shredded (Rotisserie chicken works well)
- 1 cup Corn (Fresh, frozen, or canned works)
- 1/2 cup Cooked quinoa or rice (Use what you prefer or have on hand)
- 1/2 cup Black beans (Rinsed and drained)
- 1/4 cup Red onion, diced (Sweet onion can be a milder alternative)
- 1 Avocado, sliced (Add for creaminess)
- 1/4 cup Cilantro, chopped (Optional, but enhances flavor)
- 1 Lime, juiced (Freshly squeezed is best)
- Salt and pepper (To taste)
- Olive oil (For drizzling)
Instructions
- Combine the shredded chicken, corn, quinoa or rice, black beans, and red onion in a large bowl.
- Drizzle with olive oil and lime juice, then season with salt and pepper.
- Toss everything together until well combined.
- Serve in bowls, topped with avocado, cilantro, and any optional toppings as desired.
Notes
Use freshly cooked chicken for the best flavor and tenderness. Roasting the corn before adding can enhance its sweetness. Add a splash of hot sauce for an extra kick.
