Homemade Mexican Street Corn Salad

Ingredients

  • 4 cups Corn (fresh or frozen), charred for best flavor
  • 1/2 cup Queso fresco, substitute with feta if unavailable
  • 1/4 cup Mayonnaise, use a light version for fewer calories
  • 1/4 cup Sour cream, Greek yogurt is a healthier alternative
  • Juice of 2 limes Lime juice, freshly squeezed for best flavor
  • 1 teaspoon Chili powder, adjust according to spice preference
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish, can also use green onions

Instructions

  1. Combine the charred corn, queso fresco, mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a large bowl.
  2. Mix well until everything is well-coated.
  3. Taste and adjust seasoning if necessary.
  4. Garnish with fresh cilantro before serving.
  5. Serve cold or at room temperature.

Notes

Try adding diced jalapeños for an extra kick of heat. Let the salad chill in the refrigerator before serving to allow the flavors to meld.
