Homemade Oatmeal Cream Pies

Delightful oatmeal cream pies combining soft, chewy cookies with rich and creamy filling, reminiscent of childhood treats.

  • Total Time: 27 minutes
  • Yield: 12 cookies 1x

Ingredients

Scale
  • 1 cup Rolled oats (Old-fashioned oats work best for texture)
  • 1 cup All-purpose flour (Make sure to measure correctly for the best results)
  • 1/2 teaspoon Baking soda (Helps the cookies rise)
  • 1/2 teaspoon Salt (Enhances the sweetness)
  • 1 teaspoon Cinnamon (Adds warmth to the flavor)
  • 1/2 cup Unsalted butter, softened (Bring to room temperature for easy mixing)
  • 1 cup Brown sugar (Light or dark sugar works fine)
  • 1/2 cup Granulated sugar (Provides the right amount of sweetness)
  • 1 Large egg (Acts as a binder for ingredients)
  • 1 teaspoon Vanilla extract (Enhances overall flavor)
  • 1 cup Cream cheese, softened (Ensure it’s at room temperature for smooth mixing)
  • 2 cups Powdered sugar (Provides sweetness and structure)
  • 1 teaspoon Vanilla extract (for filling) (For added flavor in the cream filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the rolled oats, flour, baking soda, salt, and cinnamon in a bowl.
  3. Combine the softened butter, brown sugar, and granulated sugar until creamy in a separate bowl.
  4. Add in the egg and vanilla extract to the wet mixture and mix well.
  5. Incorporate the dry ingredients into the wet ingredients and mix until fully combined.
  6. Prepare the baking sheet by dropping tablespoons of dough onto it lined with parchment paper.
  7. Bake for 10-12 minutes until the edges are golden. Let the cookies cool completely on a wire rack.
  8. Make the cream filling by beating cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Assemble the cookies by spreading the cream filling between two cookies to create a sandwich. Enjoy!

Notes

For best results, ensure your butter is at room temperature for easier mixing. Avoid overbaking for chewier cookies.
