Ingredients
Scale
- 2 cups mashed potatoes (cooled, plain or seasoned)
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons butter (plus more for cooking)
- 1 egg (optional, for binding)
Instructions
- Combine mashed potatoes, flour, baking powder, and salt in a mixing bowl. If using, add the egg for better binding. Knead until a soft dough forms.
- Divide the dough into four parts and shape each into a flat round.
- Heat a skillet over medium heat and melt butter.
- Cook each farl for about 4-5 minutes on each side until golden brown.
- Serve warm with eggs, bacon, or butter.
Notes
Use chilled or room-temperature mashed potatoes to avoid a gummy dough. Adjust flour as needed based on humidity and potato moisture.
