Crispy on the outside and pillowy inside, these Irish Potato Farls are a comforting skillet bread made from leftover mashed potatoes.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter (plus more for cooking)
  • 1 egg (optional, for binding)

Instructions

  1. Combine mashed potatoes, flour, baking powder, and salt in a mixing bowl. If using, add the egg for better binding. Knead until a soft dough forms.
  2. Divide the dough into four parts and shape each into a flat round.
  3. Heat a skillet over medium heat and melt butter.
  4. Cook each farl for about 4-5 minutes on each side until golden brown.
  5. Serve warm with eggs, bacon, or butter.

Notes

Use chilled or room-temperature mashed potatoes to avoid a gummy dough. Adjust flour as needed based on humidity and potato moisture.
