Ingredients
Scale
- 2 tablespoons Olive oil (Can substitute with vegetable oil)
- 1 Onion, chopped (Yellow or white onions work best)
- 2 Garlic cloves, minced (Fresh garlic is recommended)
- 2 Carrots, diced (Can swap with parsnips for a different flavor)
- 2 Celery stalks, diced (Optional but adds depth)
- 6 cups Chicken broth (Make sure it’s low-sodium)
- 1 can (14.5 oz) Diced tomatoes (Can use fresh tomatoes, diced)
- 1 teaspoon Dried oregano (Fresh oregano can also be used)
- 1 teaspoon Dried basil (Can substitute with fresh basil)
- Salt and pepper to taste (Adjust based on personal preference)
- 1 cup Cooked pasta (optional) (Any pasta of choice works)
- Fresh parsley for garnish (Chopped for fresh flavor)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until soft.
- Add the diced carrots and celery. Cook for 5-7 minutes until they begin to soften.
- Pour in the chicken broth and add the diced tomatoes, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 15-20 minutes.
- If using, stir in cooked pasta and heat through.
- Serve hot, garnished with fresh parsley.
Notes
Choose fresh herbs for a more vibrant flavor. Don’t rush the sautéing process; allow the onions to caramelize slightly for rich flavor. For a creamier texture, blend a portion of the soup and return it to the pot.
