Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 cups sweetened condensed milk
  • 3/4 cup key lime juice
  • 3 large egg yolks
  • Zest of 2 key limes
  • Whipped cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a greased baking dish.
  3. In another bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and key lime zest until smooth.
  4. Pour the filling over the crust.
  5. Bake for 15-20 minutes until set, then let cool.
  6. Chill in the fridge for at least 120 minutes before cutting into bars.
  7. Serve chilled with whipped cream.

Notes
