- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 2 cups sweetened condensed milk
- 3/4 cup key lime juice
- 3 large egg yolks
- Zest of 2 key limes
- Whipped cream for serving
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a greased baking dish.
- In another bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and key lime zest until smooth.
- Pour the filling over the crust.
- Bake for 15-20 minutes until set, then let cool.
- Chill in the fridge for at least 120 minutes before cutting into bars.
- Serve chilled with whipped cream.
Notes
Use fresh key lime juice and zest for the brightest flavor. Chill thoroughly for cleaner slices.
