Ingredients

  • 1/4 cup Sugar
  • 1/2 cup Unsalted butter, melted
  • 4 Large egg yolks
  • 1 can (14 ounces) Sweetened condensed milk
  • 1/2 cup Fresh key lime juice
  • 1 tablespoon Key lime zest
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until resembling wet sand. Press into a 9-inch pie pan.
  3. Bake for 8-10 minutes until golden.
  4. Whisk together egg yolks, sweetened condensed milk, lime juice, and lime zest until smooth.
  5. Pour the filling into the baked crust and smooth the top.
  6. Bake for 10-15 minutes until the filling is set but jiggles slightly.
  7. Let cool to room temperature, then refrigerate for at least 2 hours.
  8. Serve chilled with whipped cream and lime zest on top.

Notes

Use fresh key limes for the best flavor; bottled lime juice can’t replicate the freshness. Allow the pie to cool completely before refrigerating for better texture.
