- 8 ounces Pasta (rotini or fusilli)
- 4 cups Arugula
- 1 Lemon (juiced and zested)
- 1/4 cup Olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional) to taste
- Cherry tomatoes (halved, optional) to taste
Instructions
- Cook the pasta according to package instructions. Drain and let it cool.
- Combine the cooled pasta and arugula in a large bowl.
- Mix lemon juice, lemon zest, olive oil, salt, and pepper in a small bowl.
- Dress the pasta and arugula with the dressing, tossing to combine.
- Add grated Parmesan cheese and cherry tomatoes, if using, and serve immediately or chill before serving.
Notes
Use freshly squeezed lemon juice for a more vibrant flavor. Let the salad sit for at least 15 minutes after dressing for enhanced taste.
