Lemon Arugula Pasta Salad

Ingredients

  • 4 cups Arugula
  • 1 Lemon (juiced and zested)

Instructions

  1. Cook the pasta according to package instructions. Drain and let it cool.
  2. Combine the cooled pasta and arugula in a large bowl.
  3. Mix lemon juice, lemon zest, olive oil, salt, and pepper in a small bowl.
  4. Dress the pasta and arugula with the dressing, tossing to combine.
  5. Add grated Parmesan cheese and cherry tomatoes, if using, and serve immediately or chill before serving.

Notes

Use freshly squeezed lemon juice for a more vibrant flavor. Let the salad sit for at least 15 minutes after dressing for enhanced taste.
