  • Total Time: 17 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 2 medium Zucchini, spiralized into noodles
  • 1 cup Cherry tomatoes, halved
  • 2 tablespoons Butter (or olive oil for vegan option)
  • 2 tablespoons Lemon juice, freshly squeezed
  • ¼ cup Parmesan cheese, grated (or nutritional yeast for vegan option)
  • 2 tablespoons Fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Spiralize the zucchini to create noodles using a spiralizer or vegetable peeler.
  2. Melt the butter in a pan over medium heat until it begins to bubble.
  3. Add the spiralized zucchini noodles and sauté for about 2-3 minutes until slightly tender.
  4. Stir in the halved cherry tomatoes and cook for another 2 minutes until they soften.
  5. Squeeze fresh lemon juice over the noodles and mix well to combine all flavors.
  6. Season with salt and pepper to taste.
  7. Serve topped with grated parmesan cheese and chopped parsley for garnish.

Notes

Select firm zucchini for better texture. Adjust cooking time based on noodle thickness to avoid mushiness.
