Instructions
- Heat the oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Cook the diced chicken until browned.
- Stir in the carrots, chicken broth, and orzo pasta. Bring to a boil.
- Reduce heat and simmer until the orzo is tender, about 10 minutes.
- Stir in lemon juice and season with salt and pepper, then serve hot garnished with fresh parsley.
Notes
Dice the chicken uniformly for even cooking. Keep heat low to prevent mushy orzo. Adjust lemon, salt, and pepper to taste.
