- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1/2 cup limoncello
- 1/2 cup lemon juice
- 1 package ladyfinger cookies
- Powdered sugar for dusting
Instructions
- Whip cream and sugar: In a large bowl, beat the heavy cream, sugar, and vanilla extract until soft peaks form.
- Fold in mascarpone and zest: Gently fold in the mascarpone cheese and lemon zest until combined and smooth.
- Make the soaking liquid: In a shallow dish, mix the limoncello and lemon juice for dipping the ladyfingers.
- Dip and layer ladyfingers: Dip each ladyfinger into the limoncello mixture for a few seconds, then layer them in a dish.
- Add mascarpone layer: Spread half of the mascarpone mixture over the first layer of ladyfingers.
- Repeat for second layer: Repeat the layers with the remaining ladyfingers and mascarpone mixture for a second tier.
- Chill to set: Cover and refrigerate for at least 240 minutes, or overnight to let flavors meld and set.
- Finish and serve: Before serving, dust with powdered sugar and add extra lemon zest if desired.
Notes
For best texture, chill for at least 4 hours, ideally overnight. Store covered in the fridge for up to 3 days.
