Ingredients
Scale
- 1 cup Chopped Rhubarb
- 1 cup All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1/2 cup Unsalted Butter, room temperature
- 2 Large Eggs, at room temperature
- 1/4 cup Lemon Juice, freshly squeezed
- 1 tablespoon Lemon Zest
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly.
- Cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition until fully combined.
- Stir in the lemon juice and lemon zest, ensuring an even distribution throughout the mixture.
- Whisk together the all-purpose flour, baking powder, baking soda, and salt until well mixed.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined to avoid overmixing.
- Fold in the chopped rhubarb, ensuring it is evenly dispersed within the batter.
- Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
Notes
For best results, use room temperature butter and eggs and toss rhubarb in a bit of flour to prevent sinking in the batter.
