Ingredients
Scale
- 2 Boneless, skinless chicken breasts
- 2 tablespoons Maple syrup
- 2 tablespoons Dijon mustard
- 2 medium Sweet potatoes, peeled and diced
- 1 tablespoon Olive oil
- Salt and pepper to taste
- Fresh spinach or kale (optional, for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the glaze in a small bowl by combining maple syrup and Dijon mustard.
- Season the chicken with salt and pepper, then coat it evenly with the maple Dijon mixture.
- Toss the sweet potatoes in a separate bowl with olive oil, salt, and pepper until well-coated.
- Arrange on a baking sheet lined with parchment paper, placing the chicken and sweet potatoes together.
- Bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
- Serve the chicken and sweet potatoes over a bed of fresh spinach or kale, if desired.
Notes
Ensure the chicken is pounded to an even thickness for uniform cooking. Feel free to substitute other root vegetables for sweet potatoes, like carrots or parsnips, for a different flavor profile.
