Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, matcha powder, baking powder, and salt until evenly combined.
- Cream together the butter, granulated sugar, and brown sugar until smooth and light.
- Beat in the egg and vanilla extract until well combined and the mixture is smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined—do not overmix.
- Gently fold in the chopped strawberries, drop spoonfuls of dough onto the prepared sheet, and bake for 10–12 minutes until edges are lightly golden. Let cool briefly on the sheet before transferring to a wire rack to cool completely.
Notes
Use room-temperature butter and egg for smooth incorporation. Store in an airtight container at room temperature for up to 3 days or freeze for longer.
