Ingredients

  • Salt and pepper, to taste
  • 1 cup Cooked rice or quinoa
  • 1 cup Cherry tomatoes, halved
  • 1/2 Cucumber, diced
  • Olive oil, for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix in a large bowl, ground beef, breadcrumbs, Parmesan cheese, egg, garlic, parsley, oregano, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. Serve meatballs over cooked rice or quinoa, topped with cherry tomatoes and cucumbers.
  6. Drizzle with olive oil before serving.
