- 1 pound Ground beef
- 1/4 cup Breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 1 Egg
- 2 cloves Garlic, minced
- 2 tablespoons Fresh parsley, chopped

- Salt and pepper, to taste
- 1 cup Cooked rice or quinoa
- 1 cup Cherry tomatoes, halved
- 1/2 Cucumber, diced
- Olive oil, for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- Mix in a large bowl, ground beef, breadcrumbs, Parmesan cheese, egg, garlic, parsley, oregano, salt, and pepper.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 20-25 minutes or until cooked through.
- Serve meatballs over cooked rice or quinoa, topped with cherry tomatoes and cucumbers.
- Drizzle with olive oil before serving.
