Mexican Casserole: Easy Weeknight Dinner Casserole Recipe

Ingredients

  • 1 lb Ground Beef
  • 1 can Black Beans, drained and rinsed
  • 46 Corn Tortillas, cut into strips
  • 1 can Diced Tomatoes
  • 1 cup Shredded Cheddar Cheese
  • 1 packet Taco Seasoning
  • 1/2 cup Onion, chopped
  • 1 cup Bell Pepper, chopped
  • 1 cup Salsa
  • Salt and Pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. Brown the beef in a large skillet over medium heat, breaking it into small pieces until browned.
  3. Cook the onion and bell pepper in the skillet until softened.
  4. Add taco seasoning, then black beans and diced tomatoes, and heat through.
  5. Layer half of the tortilla strips in the baking dish, followed by half of the beef mixture, salsa, and half of the cheese.
  6. Repeat the layers with remaining ingredients.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.
  8. Cool slightly before serving.

Notes

Let the casserole sit for a few minutes after baking for easier serving. Garnish with fresh cilantro or avocado slices for added flavor.
