- 1 lb Ground Beef
- 1 can Black Beans, drained and rinsed
- 4–6 Corn Tortillas, cut into strips
- 1 can Diced Tomatoes
- 1 cup Shredded Cheddar Cheese
- 1 packet Taco Seasoning
- 1/2 cup Onion, chopped
- 1 cup Bell Pepper, chopped
- 1 cup Salsa
- Salt and Pepper, to taste
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 baking dish.
- Brown the beef in a large skillet over medium heat, breaking it into small pieces until browned.
- Cook the onion and bell pepper in the skillet until softened.
- Add taco seasoning, then black beans and diced tomatoes, and heat through.
- Layer half of the tortilla strips in the baking dish, followed by half of the beef mixture, salsa, and half of the cheese.
- Repeat the layers with remaining ingredients.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Cool slightly before serving.
Notes
Let the casserole sit for a few minutes after baking for easier serving. Garnish with fresh cilantro or avocado slices for added flavor.
