  • 2 Large eggs (for filling)
  • ⅓ cup Fresh Meyer lemon juice (for filling)
  • 1 tbsp Finely grated Meyer lemon zest (for filling)
  • 2 tbsp All-purpose flour (for filling)
  • Powdered sugar for dusting (to taste)

Instructions

  1. Mix the softened butter, flour, and powdered sugar in a bowl until the mixture becomes crumbly.
  2. Press the crumbly dough into a greased pan, ensuring an even layer across the bottom.
  3. Bake in a preheated oven at 350°F (175°C) for about 15 minutes or until lightly golden.
  4. Whisk the eggs, granulated sugar, Meyer lemon juice, lemon zest, and flour until the mixture is smooth.
  5. Carefully pour the lemon mixture over the hot crust.
  6. Return to the oven and bake for an additional 20 minutes or until the filling is set.
  7. Allow the bars to cool at room temperature for about an hour, then refrigerate for at least 1 hour.
  8. Once chilled, cut into bars and dust with powdered sugar before serving.

Notes

Use fresh Meyer lemons for the best flavor. Adjust sugar to taste based on the sweetness of your lemons.
