- 1/2 cup Onion, diced
- 2 Garlic cloves, minced
- 4 cups Chicken broth
- 1 cup Heavy cream
- 2 cups Cooked chicken, shredded
- 1 package (16 oz) Gnocchi
- 2 cups Fresh spinach
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the carrots, celery, onion, and garlic until soft.
- Combine the chicken broth and bring to a boil.
- Mix in the heavy cream and cooked chicken until combined.
- Add the gnocchi and cook according to package instructions until they float.
- Incorporate the fresh spinach and season with salt and pepper.
- Serve hot, garnished with Parmesan cheese.
Notes
For best texture, don’t overcook the gnocchi; they should float for about 2-3 minutes. Adding lemon zest at the end brightens the dish. Store leftovers in an airtight container for up to 3 days.
