One-Pan Honey Mustard Chicken & Rice Bake

This comforting, hands-off baked casserole combines juicy chicken with tender rice, complemented by a simple honey mustard sauce.

Ingredients

  • 2 cups Chicken broth
  • 4 tbsp Dijon mustard
  • 4 tbsp Honey
  • 2 tsp Garlic powder
  • 1/2 tsp Smoked paprika
  • 4 Chicken breasts (pounded to 1-inch thickness)
  • 1 cup Long grain white rice
  • 1/2 tsp Dried thyme
  • 3/4 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit and position a rack in the center.
  2. Mix the chicken broth, Dijon mustard, honey, garlic powder, smoked paprika, dried thyme, salt, and black pepper together until smooth.
  3. Pound each chicken breast to an even 1-inch thickness for uniform baking.
  4. Season both sides of the chicken with a pinch of salt and pepper, then place in the baking dish.
  5. Spread the uncooked long grain white rice in an even layer in a 9×13-inch baking dish.
  6. Pour the honey mustard sauce over the rice without stirring.
  7. Arrange the seasoned chicken breasts on top of the rice.
  8. Tent the dish lightly with foil.
  9. Bake for 30 minutes.
  10. Remove the foil and continue baking for an additional 10 to 15 minutes until the chicken reaches 165 F.
  11. Rest for 5 minutes, then slice the chicken if desired and serve with rice.

Notes

Pound chicken evenly for best results and make sure to measure liquid accurately.
