- 2 cups Chicken broth
- 4 tbsp Dijon mustard
- 4 tbsp Honey
- 2 tsp Garlic powder
- 1/2 tsp Smoked paprika
- 4 Chicken breasts (pounded to 1-inch thickness)
- 1 cup Long grain white rice
- 1/2 tsp Dried thyme
- 3/4 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Preheat the oven to 375 degrees Fahrenheit and position a rack in the center.
- Mix the chicken broth, Dijon mustard, honey, garlic powder, smoked paprika, dried thyme, salt, and black pepper together until smooth.
- Pound each chicken breast to an even 1-inch thickness for uniform baking.
- Season both sides of the chicken with a pinch of salt and pepper, then place in the baking dish.
- Spread the uncooked long grain white rice in an even layer in a 9×13-inch baking dish.
- Pour the honey mustard sauce over the rice without stirring.
- Arrange the seasoned chicken breasts on top of the rice.
- Tent the dish lightly with foil.
- Bake for 30 minutes.
- Remove the foil and continue baking for an additional 10 to 15 minutes until the chicken reaches 165 F.
- Rest for 5 minutes, then slice the chicken if desired and serve with rice.
Notes
Pound chicken evenly for best results and make sure to measure liquid accurately.
