One Pot Irish Chicken

Cozy, simple, and full of Irish comfort – this one-pot dinner is perfect for weeknights and lazy weekends alike.

Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons olive oil in a large pot over medium heat.
  2. Season the chicken with salt and pepper, then brown it in the pot on all sides (about 3–4 minutes per side). Remove chicken and set aside.
  3. In the same pot, add the chopped onion, sliced carrots, and cubed potatoes; cook until softened, about 5–7 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add 2 cups chicken broth, 1 tablespoon fresh thyme, and 1 tablespoon fresh parsley; return the chicken to the pot.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 30–40 minutes until the chicken is cooked through and potatoes are tender.
  7. Taste and adjust seasoning with salt and pepper as needed, then serve warm.

Notes

Brown the chicken well for better flavor. For creamier potatoes, mash a few in the pot at the end.
