Ingredients

- 4 chicken thighs
- 4 chicken drumsticks
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, cubed
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups chicken broth
- 1 tablespoon fresh thyme
- 1 tablespoon fresh parsley
- Salt and pepper to taste
Instructions
- Heat 2 tablespoons olive oil in a large pot over medium heat.
- Season the chicken with salt and pepper, then brown it in the pot on all sides (about 3–4 minutes per side). Remove chicken and set aside.
- In the same pot, add the chopped onion, sliced carrots, and cubed potatoes; cook until softened, about 5–7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add 2 cups chicken broth, 1 tablespoon fresh thyme, and 1 tablespoon fresh parsley; return the chicken to the pot.
- Bring to a boil, then reduce heat to low, cover, and simmer for 30–40 minutes until the chicken is cooked through and potatoes are tender.
- Taste and adjust seasoning with salt and pepper as needed, then serve warm.
Notes
Brown the chicken well for better flavor. For creamier potatoes, mash a few in the pot at the end.
