Ingredients
Scale
- 1 lb Chicken thighs or breasts (use thighs for more moisture; breasts for leaner option)
- 2 cups Cooked rice (any type works—white, brown, or jasmine)
- 1/2 cup Honey (ensure it’s pure honey for best flavor)
- 1/2 cup BBQ sauce (use your favorite brand or homemade)
- 1 tablespoon Olive oil (can substitute with vegetable or canola oil)
- 1 teaspoon Garlic powder (fresh minced garlic can be used for a stronger taste)
- Salt and pepper (to taste)
- Chopped green onions (for garnish, optional but adds a fresh touch)
Instructions
- Heat the skillet: In a large skillet, heat olive oil over medium heat.
- Season the chicken with garlic powder, salt, and pepper to taste.
- Cook the chicken: Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes per side.
- Prepare the sauce: In a bowl, mix together the honey and BBQ sauce until well combined.
- Combine chicken and sauce: Pour the honey BBQ mixture over the chicken and stir to coat evenly.
- Add rice: Add the cooked rice to the skillet and mix well to combine.
- Heat through: Cook for an additional 5 minutes, allowing the flavors to meld and the rice to heat through.
- Garnish and serve: Serve with chopped green onions on top if desired.
Notes
Use a meat thermometer to ensure chicken is cooked to 165°F. Allow rice to cool before adding to ensure optimal texture. Consider marinating chicken for deeper flavor.
