A sunny dessert bursting with juicy peaches and tart raspberries, topped with a tender cake-like crust.

  • Total Time: 60 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 4 cups sliced peaches
  • 1 cup raspberries
  • 1 tablespoon lemon juice
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix sliced peaches, raspberries, sugar, and lemon juice. Pour the fruit mixture into a greased baking dish.
  3. In another bowl, whisk together flour, milk, melted butter, baking powder, salt, and vanilla until smooth.
  4. Pour the batter over the fruit mixture in the baking dish.
  5. Bake for 40-45 minutes or until the top is golden brown and the fruit is bubbly.
  6. Serve warm with a scoop of vanilla ice cream.

Notes

For best results, use ripe but firm peaches. Let fruit sit with sugar and lemon juice for extra flavor.
