  • 1 cup Toasted pecans, chopped (can substitute with walnuts if desired)
  • 1 cup Heavy whipping cream (for whipping; ensure it’s chilled)
  • 1 cup Powdered sugar (adjust for sweetness)
  • 1 teaspoon Vanilla extract (pure vanilla is recommended)
  • 1 cup Vanilla pudding mix (instant mix works best)
  • 2 cups Milk (whole or low-fat milk is suitable)

Instructions

  1. Prepare the pie crust according to package instructions and allow it to cool completely.
  2. Mix the vanilla pudding mix and milk in a large mixing bowl until smooth. Let it sit for a few minutes until it thickens.
  3. Whip the heavy cream with powdered sugar and vanilla extract in another bowl until soft peaks form.
  4. Combine the whipped cream into the vanilla pudding mixture until combined.
  5. Add half of the toasted pecans evenly over the pie crust.
  6. Pour the pudding and whipped cream mixture over the pecans in the pie crust.
  7. Top with the remaining pecans and drizzle with additional whipped cream if desired.
  8. Chill the pie for at least 2-3 hours before serving.

Notes

Ensure the heavy cream is well chilled for best whipping results. Toast the pecans in advance to enhance their flavor.
