Pupusas with Pickled Cabbage

Pupusas with pickled cabbage are a traditional Salvadoran dish featuring masa harina dough filled with cheese and served with a tangy curtido.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups masa harina
  • 1 1/4 cups warm water
  • 1 cup shredded cheese (queso blanco or mozzarella)
  • 1/2 cup refried beans (optional)
  • Salt to taste
  • 1 small head cabbage, shredded
  • 1 grated carrot
  • 1/2 cup white vinegar
  • 1 teaspoon oregano
  • 1 teaspoon salt (for curtido)
  • 1 teaspoon sugar

Instructions

  1. Combine masa harina and salt in a bowl. Gradually add warm water and mix until it forms a smooth dough.
  2. Divide the dough into small balls. Flatten each ball to form a disc.
  3. Place a small amount of cheese and optional refried beans in the center of each disc, fold to cover, and reshape into a disc.
  4. Heat a skillet over medium-high heat and cook each pupusa for about 2-3 minutes on each side until golden brown.
  5. Mix the cabbage, grated carrot, vinegar, oregano, salt, and sugar in a bowl. Allow to marinate for at least 30 minutes before serving.
  6. Serve the pupusas warm with curtido on the side.

Notes

Use warm water for the dough to ensure a smooth consistency. Let the dough rest for about 10 minutes to enhance the texture. Cook on medium-high heat for a crispy exterior without burning.
