A vibrant and flavorful dish that combines the bold tastes of tomatoes, eggs, and aromatic spices, perfect for any meal of the day.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 28 oz (800 g) Cherry or Roma tomatoes, fresh, for best flavor
  • 2 medium (about 150 g) Roasted red peppers, store-bought or homemade
  • 4 oz (115 g) Feta cheese, crumbled for garnish
  • 4 Large eggs, room temperature for even cooking
  • 3 cloves Garlic, minced for flavor
  • 1 tsp Ground cumin, for warmth
  • 1/2 tsp Smoked paprika, adds depth of flavor
  • Pinch Chili flakes, adjust to taste for heat
  • 2 tbsp (30 ml) Extra virgin olive oil, for sautéing
  • Fresh parsley or cilantro, optional, for garnish
  • Salt and pepper, to taste, enhances all flavors

Instructions

  1. Preheat your oven’s broiler to high and place whole red peppers on a baking sheet.
  2. Broil the peppers, turning every 5 minutes until charred (about 15-20 minutes).
  3. Transfer charred peppers to a bowl, cover, and let steam for 10 minutes.
  4. Once cool, peel the skins off the peppers, roughly chop them, and set aside.
  5. Heat olive oil in a large skillet over medium heat, then add minced garlic and sauté for 1 minute until fragrant.
  6. Add cumin, smoked paprika, and chili flakes to the skillet, stirring for 30 seconds.
  7. Add canned tomatoes and roasted peppers to the skillet, simmer for 8-10 minutes until sauce thickens. Season with salt and pepper to taste.
  8. Make small wells in the sauce, crack the eggs directly into them, cover, and reduce heat to low.
  9. Cook eggs until the whites are set and yolks are runny, about 7-10 minutes.
  10. Finish with crumbled feta cheese and garnish with parsley or cilantro, serve immediately.

Notes

Choose ripe, fresh tomatoes for the best flavor. Allow eggs to reach room temperature for even cooking. Use high-quality extra virgin olive oil for rich flavor.
