Ingredients
Scale
- 2 cups Fresh Raspberries (Mashed for best flavor; frozen raspberries can be used if fresh are unavailable)
- 1/4 cup Granulated Sugar (Adjust to taste based on the tartness of the raspberries)
- 1 tbsp Lemon Juice (optional; enhances freshness)
- 1 cup Heavy Whipping Cream (Make sure it’s chilled for better whipping results)
- 2 tbsp Powdered Sugar (Provides sweetness without grittiness)
- 1/2 tsp Vanilla Extract (Use pure vanilla for the best flavor)
- 1 tsp Unflavored Gelatin Powder (optional; for added stability in the mousse)
- 2 tbsp Cold Water (if using gelatin; dissolves gelatin for incorporation)
Instructions
- Mash the raspberries in a bowl with granulated sugar and lemon juice until juicy but still chunky.
- Whip the chilled heavy cream in another bowl until thickened. Gradually add powdered sugar and vanilla extract while continuing to whip until stiff peaks form.
- Dissolve gelatin in cold water if using, according to package instructions.
- Fold the raspberry mixture gently into the whipped cream until fully combined, being careful not to deflate the cream.
- Add the dissolved gelatin into the mixture if using, ensuring it’s evenly distributed.
- Refrigerate the mousse in serving cups for at least 120 minutes to set properly.
- Garnish the set mousse with extra raspberries before serving for an elegant touch.
Notes
Always chill equipment for whipping cream for better volume. For a dairy-free version, substitute heavy cream with light coconut cream.
