Satisfying Broccoli Cheese Soup with Ground Beef

Ingredients

  • 4 cups broccoli florets
  • 1 onion, chopped
  • 3 cups beef broth
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 3 tablespoons flour
  • Salt and pepper to taste
  • Optional: croutons for topping

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat if needed.
  2. Add the chopped onion and cook until softened, about 3–4 minutes.
  3. Stir in the flour and cook for 1–2 minutes to remove the raw taste.
  4. Gradually add the beef broth while stirring to avoid lumps; bring to a simmer.
  5. Add the broccoli florets and cook until tender, about 6–8 minutes.
  6. Stir in the milk and heavy cream, then add the shredded cheddar cheese until melted and smooth.
  7. Season with salt and pepper to taste.
  8. Serve hot, optionally topped with croutons.

Notes

For make-ahead options, prep the chopped onion and broccoli up to 2 days in advance. The soup can also be stored in the fridge for 3–4 days or frozen for up to 2 months.
