- 1 lb ground beef
- 4 cups broccoli florets
- 1 onion, chopped
- 3 cups beef broth
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 3 tablespoons flour
- Salt and pepper to taste
- Optional: croutons for topping
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat if needed.
- Add the chopped onion and cook until softened, about 3–4 minutes.
- Stir in the flour and cook for 1–2 minutes to remove the raw taste.
- Gradually add the beef broth while stirring to avoid lumps; bring to a simmer.
- Add the broccoli florets and cook until tender, about 6–8 minutes.
- Stir in the milk and heavy cream, then add the shredded cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, optionally topped with croutons.
Notes
For make-ahead options, prep the chopped onion and broccoli up to 2 days in advance. The soup can also be stored in the fridge for 3–4 days or frozen for up to 2 months.
