Ingredients
Scale
- 1 lb shrimp, peeled and deveined (Fresh or frozen works, thawed if frozen)
- 2 cups fresh spinach (Raw or sautéed can be used)
- 1 cup cherry tomatoes, halved (Can substitute with diced regular tomatoes)
- 1 cup heavy cream (Can replace with half-and-half for a lighter option)
- 1/2 cup grated parmesan cheese (Use fresh for best flavor)
- 3 cloves garlic, minced (Adjust based on your garlic preference)
- 1 teaspoon Italian seasoning (Use fresh herbs if available for a brighter flavor)
- Salt and pepper to taste (Always adjust to your personal preference)
- Olive oil for cooking (Extra virgin adds richness)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Sauté the minced garlic until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook until pink, around 2-3 minutes.
- Incorporate the fresh spinach and halved cherry tomatoes, cooking until the spinach wilts.
- Mix in the heavy cream and add the grated parmesan cheese, Italian seasoning, salt, and pepper.
- Simmer everything together, letting it simmer for a few minutes to combine the flavors.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until bubbling and golden.
- Serve warm and enjoy your creamy, garlicky dish!
Notes
Use fresh, high-quality shrimp for the best flavor. Watch the baking time closely to avoid overcooking the shrimp. Feel free to add other vegetables like bell peppers or zucchini.
