  • Yield: 12 Sandwiches 1x

Ingredients

Scale
  • 2 cups Chicken (finely diced), cooked and cooled for best texture
  • 1/2 cup Dried cranberries, choose Ocean Spray Craisins for tartness
  • 1/2 cup Pecans (toasted and chopped), enhances flavor with a nutty crunch
  • 3 Scallions (thinly sliced), adds sharpness and freshness
  • 4 tbsp Peach jam, for sweetness and moisture
  • 2 1/2 tbsp Lemon juice (freshly squeezed), brightens the flavors
  • 2/3 cup Mayo (preferably Hellmann’s), for a creamy texture
  • 1/4 tsp Celery salt, enhances flavor depth
  • 2 tbsp Fresh flat-leaf parsley (finely chopped), adds freshness and color
  • Salt, to taste, enhances overall flavor
  • Pepper, to taste, for additional seasoning
  • 12 slices Bread (Pepperidge Farm Farmhouse White), provides structure for the sandwiches

Instructions

  1. Prepare the chicken salad filling by combining the chicken, cranberries, pecans, and scallions in a large mixing bowl.
  2. Make the dressing by whisking together the mayo, peach jam, lemon juice, celery salt, salt, and pepper until smooth.
  3. Mix everything together by pouring the dressing over the chicken mixture and stirring until evenly coated. Add the chopped parsley and mix gently.
  4. Assemble the sandwiches by laying out six slices of bread and evenly distributing the chicken salad filling on each slice.
  5. Top and cut each sandwich by placing the remaining bread slices on top, pressing down gently and cutting into quarters or halves.

Notes

Chill the chicken salad for at least 30 minutes before serving to allow flavors to meld. Use a serrated knife for cutting sandwiches.
