- 1 lb Ground beef
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 can Black beans, rinsed and drained
- 1 can Corn
- 1 can Diced tomatoes
- 2 cups Beef broth
- 1 packet Taco seasoning
- Salt and pepper, to taste
- Cheese, for topping
- Sour cream, for topping
- Chips, for topping
Instructions
- Cook the ground beef in a large pot over medium-high heat, stirring occasionally, until browned.
- Add the chopped onion and minced garlic, cooking until softened, about 3-5 minutes. Drain excess fat if necessary.
- Stir in the black beans, corn, and diced tomatoes. Pour in the beef broth and mix well.
- Sprinkle the taco seasoning into the pot, mixing thoroughly to ensure even distribution.
- Bring the mixture to a boil over medium-high heat. Reduce heat and let simmer for 20-30 minutes.
- Taste the soup and add salt and pepper according to your preference.
- Ladle the hot soup into bowls and top with cheese, sour cream, and chips as desired.
Notes
For a lighter option, substitute ground beef with turkey or chicken. Allow the soup to sit for about 10 minutes after cooking for the flavors to meld beautifully.
