Simple Taco Soup

A hearty and delicious Mexican-style soup that combines ground beef, beans, corn, and tomatoes, perfect for weeknight dinners or gatherings.

Ingredients

  • 1 lb Ground beef
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can Black beans, rinsed and drained
  • 1 can Corn
  • 1 can Diced tomatoes
  • 2 cups Beef broth
  • 1 packet Taco seasoning
  • Salt and pepper, to taste
  • Cheese, for topping
  • Sour cream, for topping
  • Chips, for topping

Instructions

  1. Cook the ground beef in a large pot over medium-high heat, stirring occasionally, until browned.
  2. Add the chopped onion and minced garlic, cooking until softened, about 3-5 minutes. Drain excess fat if necessary.
  3. Stir in the black beans, corn, and diced tomatoes. Pour in the beef broth and mix well.
  4. Sprinkle the taco seasoning into the pot, mixing thoroughly to ensure even distribution.
  5. Bring the mixture to a boil over medium-high heat. Reduce heat and let simmer for 20-30 minutes.
  6. Taste the soup and add salt and pepper according to your preference.
  7. Ladle the hot soup into bowls and top with cheese, sour cream, and chips as desired.

Notes

For a lighter option, substitute ground beef with turkey or chicken. Allow the soup to sit for about 10 minutes after cooking for the flavors to meld beautifully.
