Instructions
- Prepare the ingredients: Place the diced sweet potatoes, brown rice, chopped onion, and minced garlic in the slow cooker.
- Season the chicken: Season the chicken breasts with paprika, salt, and pepper and place them on top of the vegetable and rice mixture.
- Pour the chicken broth over the ingredients in the slow cooker.
- Cook the mixture: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and sweet potatoes are tender.
- Shred the chicken: Before serving, shred the chicken in the slow cooker and mix everything together.
- Serve the rice bowl warm, topped with green onions, avocado, or cilantro if desired.
