Ingredients
Scale
- 2 pounds Boneless, skinless chicken thighs
- 1 1/2 pounds Baby potatoes, halved
- 1/3 cup Honey
- 6 cloves Garlic, minced
- 1/3 cup Low-sodium soy sauce
- 1/2 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2 Bell peppers, sliced
- 3 medium Carrots, sliced
- 3 cups Broccoli florets
Instructions
- Prepare the Crockpot: Trim excess fat from the chicken thighs. Wash the potatoes thoroughly. Halve any potatoes larger than two inches. Arrange the potatoes across the bottom of the crockpot. Place the chicken thighs evenly over the potatoes.
- Mix the Honey Garlic Sauce: Measure the honey into a medium bowl. Add the minced garlic to the honey. Pour in the soy sauce. Season the mixture with salt and black pepper. Whisk the ingredients until the sauce looks smooth.
- Assemble the Meal: Pour the honey garlic mixture over the chicken and potatoes. Turn the chicken once to coat its upper surface. Arrange the carrots and bell peppers over the chicken. Reserve the broccoli for later if you prefer a firmer texture. Cover the crockpot securely with its lid.
- Slow Cook and Serve: Cook the meal on low for 6 to 8 hours, or on high for 3 to 4 hours. Add the broccoli during the final 30 to 45 minutes when using firmer florets. Check that the thickest chicken thigh reaches 165°F internally. Rest the cooked chicken for 5 minutes before serving. Spoon the vegetables and sauce onto plates. Serve the honey garlic chicken while hot.
Notes
Use low-sodium soy sauce to avoid excessive salt. Add broccoli later for firmer texture.
