- 1 cup sourdough discard
- 2 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine mashed bananas, sugar, melted butter, egg, and vanilla extract until well blended.
- Add the sourdough discard until the mixture is uniform.
- Mix flour, baking soda, and salt in another bowl.
- Combine the dry ingredients with the wet mixture, stirring just until combined.
- Fold in the chocolate chips.
- Fill the muffin cups evenly with the batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a rack to cool completely.
Notes
Use overripe bananas for maximum sweetness and do not overmix the batter.
