Ingredients

  • 2 Grilled Chicken Breasts, sliced

  • 1 cup Black Beans, rinsed and drained
  • 1 cup Corn Kernels
  • 1 Avocado, diced
  • 1/2 cup Shredded Cheese (cheddar or Mexican blend)
  • 1/4 cup Red Onion, sliced
  • 1/4 cup Cilantro, chopped
  • Lime Vinaigrette, to taste

Instructions

  1. Grill the chicken breasts until cooked through and fully seasoned. Let them rest before slicing.
  2. Prepare the salad base by combining the mixed greens, cherry tomatoes, black beans, corn, avocado, cheese, red onion, and cilantro in a large bowl.
  3. Add the sliced grilled chicken on top of the salad.
  4. Toss with lime vinaigrette or your preferred dressing.
  5. Serve immediately, tossing gently to combine.
