  • Total Time: 75 minutes
  • Yield: 8 slices 1x

Ingredients

Scale
  • 1 cup canned pumpkin
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix together the pumpkin, sugar, and vegetable oil until well combined.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves in another bowl.
  5. Gradually add the dry ingredients to the pumpkin mixture and stir until just combined.
  6. Pour the batter into the prepared loaf pan, spreading it out evenly.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Check the freshness of your spices; fresh spices can enhance flavor. Wrap the bread in plastic wrap and let it sit for a day for richer flavors.
