- Blueberry Syrup:
- 2 1/4 cups blueberries (fresh or frozen)
- 1 cup granulated sweetener (erythritol, monk fruit blend, or preferred sugar substitute)
- 1 cup filtered water
- 1 tsp lemon juice
- Soda & Cream:
- Ice
- 1 cup club soda (per 2 servings)
- 1/4 cup sugar free blueberry syrup (homemade from above)
- 3 tbs half & half
- Toppings (optional):
- 1/4 cup whipped cream
Instructions
- Combine 1 cup filtered water, 1 cup granulated sweetener, and 1 tsp lemon juice in a medium saucepan; stir until combined.
- Add 2 1/4 cups fresh or frozen blueberries and stir to coat.
- Bring the mixture to a simmer over low-medium heat, stirring occasionally — simmer for about 15 minutes.
- Mash the blueberries with the back of a wooden spoon or potato masher to release juice.
- Turn heat to medium and simmer another 8–10 minutes until slightly thickened.
- Remove from heat, let cool a bit, then strain through a fine mesh strainer, pressing solids to extract syrup.
- Chill the syrup in the refrigerator for 1–2 hours.
- To assemble: add 3–4 ice cubes to a tall glass, fill halfway with club soda, add 1/4 cup blueberry syrup, and slowly pour in 3 tbs half & half.
- Top with whipped cream if desired and stir gently to combine before sipping.
Notes
Use frozen blueberries year-round for consistent flavor. Adjust sweetener or lemon for brightness before chilling the syrup.
