Ingredients

  • 8 Tortillas (flour or corn)
  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 2 cups Shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) Black beans
  • 1 can (15 oz) Canned corn
  • 1 cup Salsa
  • 1 cup Sour cream
  • Green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat until fully cooked, then drain excess fat.
  3. Combine taco seasoning, black beans, corn, and salsa; simmer until heated through.
  4. Layer tortillas in a greased baking dish, followed by the beef mixture and cheese. Repeat layers, ending with cheese on top.
  5. Bake for 25 to 30 minutes until the cheese is melted and bubbly.
  6. Finish and let cool for a few minutes before slicing. Garnish with sour cream and green onions before serving.

Notes

Use a mix of cheeses for added depth of flavor. Customize spice levels with homemade taco seasoning.
