- 8 Tortillas (flour or corn)
- 1 pound Ground beef
- 1 packet Taco seasoning
- 2 cups Shredded cheese (cheddar or Mexican blend)
- 1 can (15 oz) Black beans
- 1 can (15 oz) Canned corn
- 1 cup Salsa
- 1 cup Sour cream
- Green onions (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat until fully cooked, then drain excess fat.
- Combine taco seasoning, black beans, corn, and salsa; simmer until heated through.
- Layer tortillas in a greased baking dish, followed by the beef mixture and cheese. Repeat layers, ending with cheese on top.
- Bake for 25 to 30 minutes until the cheese is melted and bubbly.
- Finish and let cool for a few minutes before slicing. Garnish with sour cream and green onions before serving.
Notes
Use a mix of cheeses for added depth of flavor. Customize spice levels with homemade taco seasoning.
