Ingredients
Scale
- 1 lb Ground beef or turkey (or ground chicken)
- 1 Onion, chopped (red onion preferred)
- 1 can Black beans, rinsed and drained
- 1 can Corn, drained
- 1 can Diced tomatoes (fire-roasted for a smoky flavor)
- 1 can Diced green chilies (adjust for spice)
- 1 packet Taco seasoning (or homemade)
- 2 cups Beef or chicken broth (vegetable broth as alternative)
- Salt and pepper, to taste
- Shredded cheese, for topping (cheddar or Mexican blend)
- Sour cream, for topping (Greek yogurt for a healthier option)
- Tortilla chips, for topping (thick ones recommended)
Instructions
- Heat a large pot over medium heat, then add the ground beef or turkey along with the chopped onion. Cook until the meat is browned and the onion is softened.
- Stir in the black beans, corn, diced tomatoes, diced green chilies, taco seasoning, and broth. Mix well to combine all ingredients.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, allowing the flavors to meld together.
- Taste and season with salt and pepper according to your preferences.
- Serve the hot soup in bowls, garnished with shredded cheese, a dollop of sour cream, and a handful of tortilla chips for added crunch.
Notes
For added flavor, try grilling the meat before adding it to the soup. Adjust broth for desired thickness.
