Ingredients
- Whole chicken legs (or thighs) – 2.2 pounds
- Thick plain yogurt – 1¼ cup
- Kashmiri chili powder – 2-3 teaspoons
- Ginger garlic paste – 1 tablespoon
- Mustard oil (or vegetable oil) – ½ cup
- Salt – To taste
- Lemon juice – 1 tablespoon
Instructions
- Prepare the Marinade: In a large mixing bowl, combine the yogurt, ginger garlic paste, lemon juice, Kashmiri chili powder, and mustard oil. Mix until smooth.
- Marinate the Chicken: Add the chicken legs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 4 hours or overnight for maximum flavor.
- Preheat Your Cooking Method: Choose your method of cooking and preheat: grill to medium-high, oven to 400°F, Instant Pot on sauté mode, or air fryer to 375°F.
- Cook the Chicken: Cook the marinated chicken using your chosen method until fully cooked: grilling for approximately 30 minutes, baking for about 35 minutes, using the Instant Pot for 10 minutes on high pressure, or air frying for around 25 minutes.
- Rest and Serve: Let the chicken rest for a few minutes before serving it hot with naan or rice.
Notes
For enhanced flavors, marinate the chicken overnight. Consider adding a touch of honey to the marinade for a subtle sweetness while pairing it with a cooling yogurt sauce.
