Tasty Asian Spinach Pasta Salad

Ingredients

  • 10 oz FarFalle pasta
  • 5 cups Fresh spinach
  • 3/4 cup Dried cranberries
  • 1/2 cup Pine nuts
  • 6 oz Mandarin oranges
  • 1/4 cup Cilantro
  • 1/3 cup Teriyaki sauce
  • 1/2 cup Rice vinegar
  • 3/4 tsp Garlic powder
  • 3/4 tsp Onion powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Sugar
  • 1/2 cup Neutral oil
  • 1 tsp Sesame oil

Instructions

  1. Measure and rinse all ingredients to ensure cleanliness before cooking.
  2. Drain mandarin oranges and reserve any liquid.
  3. Chop cilantro finely and set aside.
  4. Toast pine nuts in a dry skillet over medium heat for 2-3 minutes.
  5. Boil a large pot of salted water and cook pasta according to package directions.
  6. Drain pasta and rinse briefly under cool water.
  7. Toss warm pasta with a tablespoon of oil to prevent sticking.
  8. Whisk teriyaki, rice vinegar, sugar, garlic powder, onion powder, salt, and pepper in a bowl.
  9. Drizzle in neutral oil while whisking to emulsify dressing.
  10. Place spinach in a mixing bowl and add warm pasta.
  11. Add cranberries, pine nuts, mandarin segments, and cilantro.
  12. Pour dressing over the salad and toss until coated.
  13. Chill for at least 20 minutes before serving.

Notes

Chill salad before serving to enhance flavors. Adjust sugar and vinegar in the dressing to taste.
