- 10 oz FarFalle pasta
- 5 cups Fresh spinach
- 3/4 cup Dried cranberries
- 1/2 cup Pine nuts
- 6 oz Mandarin oranges
- 1/4 cup Cilantro
- 1/3 cup Teriyaki sauce
- 1/2 cup Rice vinegar
- 3/4 tsp Garlic powder
- 3/4 tsp Onion powder
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 tbsp Sugar
- 1/2 cup Neutral oil
- 1 tsp Sesame oil
Instructions
- Measure and rinse all ingredients to ensure cleanliness before cooking.
- Drain mandarin oranges and reserve any liquid.
- Chop cilantro finely and set aside.
- Toast pine nuts in a dry skillet over medium heat for 2-3 minutes.
- Boil a large pot of salted water and cook pasta according to package directions.
- Drain pasta and rinse briefly under cool water.
- Toss warm pasta with a tablespoon of oil to prevent sticking.
- Whisk teriyaki, rice vinegar, sugar, garlic powder, onion powder, salt, and pepper in a bowl.
- Drizzle in neutral oil while whisking to emulsify dressing.
- Place spinach in a mixing bowl and add warm pasta.
- Add cranberries, pine nuts, mandarin segments, and cilantro.
- Pour dressing over the salad and toss until coated.
- Chill for at least 20 minutes before serving.
Notes
Chill salad before serving to enhance flavors. Adjust sugar and vinegar in the dressing to taste.
