Instructions
- Mix the pineapple juice, soy sauce, brown sugar, ketchup, minced garlic, ground ginger, and black pepper in a bowl until combined.
- Lay the chicken thighs in the bottom of the crockpot, ensuring they are spread out evenly.
- Pour the sauce mixture over the chicken thighs, ensuring they are well-coated.
- Add the diced pineapple on top of the chicken and sauce mixture.
- Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is fully cooked and tender.
- Once done, shred the chicken in the crockpot and mix it well with the sauce.
- Serve the chicken over rice and garnish with chopped green onions for added flavor and presentation.
