Ingredients
Scale
- 12 ounces Cheesy tortellini (Any flavor works, such as cheese or spinach)
- 1 cup, chopped Bell peppers (Use a mix of colors for a vibrant look)
- 1 cup, diced Cucumbers (English cucumbers work well)
- 1 cup, halved Cherry tomatoes (Optional, but adds sweetness)
- 1 cup, cubed Mozzarella cheese (Fresh mozzarella gives a creamy texture)
- ½ cup Zesty Italian dressing (Store-bought or homemade)
Instructions
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions, then drain and rinse under cold water to stop the cooking process.
- Combine the cooked tortellini, chopped bell peppers, cucumbers, cherry tomatoes, and mozzarella cheese in a large bowl.
- Drizzle the zesty Italian dressing over the salad mixture and toss gently to combine all the ingredients evenly.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes before serving.
- Serve this refreshing tortellini pasta salad at BBQs, potlucks, or family gatherings.
Notes
For best texture, rinse the tortellini to prevent mushiness. Customize vegetables based on preferences and seasons.
