Ingredients
Scale
- 2 cups All purpose flour (Can substitute with gluten-free flour)
- 1 cup Light brown sugar, packed (Brown sugar enhances sweetness)
- 2 teaspoons Baking powder (For leavening)
- 1 1/2 teaspoons Pumpkin pie spice (Can mix with cinnamon, nutmeg, and ginger)
- 1/4 teaspoon Salt (Enhances overall flavor)
- 1/2 cup Melted vegan butter (Use coconut oil for a different flavor)
- 1 cup Pumpkin puree (Fresh or canned)
- 1/2 cup Oat milk (Almond milk can be used as an alternative)
- 2 teaspoons Pure vanilla extract (Enhances sweetness and depth)
- 1 1/2 cups Powdered sugar (For the glaze)
- 4 tablespoons Pure maple syrup (Adds flavor to the glaze)
- 1 teaspoon Ground cinnamon (For glazing)
- 2–4 tablespoons Oat milk (Adjust for desired glaze consistency)
Instructions
- Preheat the oven to 350 degrees F and spray a donut pan with non-stick spray.
- Whisk the flour, brown sugar, baking powder, pumpkin pie spice, and salt in a large bowl.
- Pour in the melted vegan butter, pumpkin puree, oat milk, and vanilla. Mix well with a large spoon until combined.
- Spoon the batter into the donut pan to the top of each cavity (or use a piping bag for less mess).
- Place the pan in the oven and bake for 10-12 minutes, or until the edges are slightly browned and the donuts spring back when touched.
- Make the maple glaze by whisking all glaze ingredients together until a glaze is formed. Adjust consistency with oat milk as needed.
- Dip the slightly cooled donuts in the glaze, then place them on a wire rack (with parchment paper underneath to catch drippings).
- Enjoy right away or let the glaze harden for 15 minutes or so.
Notes
Use high-quality pumpkin puree for the best flavor. Ensure your baking powder is fresh for optimal leavening. Do not overmix the batter to avoid dense donuts.
