Instructions
- Preheat your oven to 180°C (350°F) and grease a baking dish with olive oil.
- Combine grated zucchini, chopped onion, bell pepper, and corn in a large bowl.
- Mix the eggs in another bowl until well mixed, then add to the vegetable mixture.
- Add the self-raising flour and shredded cheese, stirring until just combined.
- Season with salt and pepper to taste.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-40 minutes or until the slice is set and golden brown on top.
- Cool slightly before slicing and serving. Enjoy!
